How to Make Autumn Cookies!

At Sass & Belle, we strongly believe that cookies are always a good idea, especially as the nights start drawing in and there is a chill in the air. These fun and beautiful sugar biscuits add some seasonal charm to the home and are a tasty way to celebrate the colder months. They’re perfect with a cup of cocoa, too. Light some candles, snuggle up and indulge in these delicious treats.


What you will need:

For the Biscuits

  • 1 cup (128 g) butter (at room temperature)
  • 1 cup (128g) icing sugar
  • 1 egg, beaten
  • 1 ½ tbsp almond extract
  • 1 tsp vanilla
  • 1 tsp salt
  • 2 ½ cups (320g) sifted flour
  • Leaf cookie cutters

For the icing

  • 1 cup (128g) icing sugar
  • Red food colouring
  • Green food colouring
  • Orange food colouring
  • 3 tbsp water
  • Piping icing (we used white chocolate)
  • ½ teaspoon of vanilla

Steps:

  1. Pre-heat oven to 375 degrees celsius.
  2. Line a baking tray with greaseproof paper.
  3. With a whisk (it’s best if it’s electrical) cream the butter until it’s at a smooth and thick consistency.
  4. Add the icing sugar.
  5. Blend in the egg, flour, almond extract, vanilla and salt. You should get a dough-like consistency. Once you’ve got the consistency right, try not to work the dough too much as it will make the biscuit tough.
  6. Chill dough in the fridge for an hour. This will make it nice and easy to work with!
  7. Roll out a floured surface to roughly ¼ inch thick.
  8. Use your cookie cutter to make lots of pretty autumn leaves.
  9. Put on your grease proofed baking tray and bake for between 8-10 minutes. Make sure the sugar cookies don’t brown too much.
  10. Once out of the oven leave to cool before decorating.

Decorating cookies:

  1. Using your piping icing, create a border around each of the leaves.
  2. Mix your icing sugar, vanilla and water together with a fork and gently add in your food colouring. You want a consistency which is fairly thick but still drizzles from your spoon.
  3. As a lot of food colouring can be quite bright, we wanted to create a more muted look so feel free to mix colours together to get the right tone you want.
  4. We created three different colours and added a little teaspoon on both. Then with a cocktail stick swirl and mix the colours together until there is an ombre effect.
  5. This is where you can get creative so make sure you have fun with it and add more water and icing sugar as desired.
  6. Once you’ve iced every cookie, leave to set.
