Pumpkin Autumn Warmer

We love everything about Autumn and we particularly adore Halloween! The dressing up, the spooks and most importantly, the pumpkins. They’re fun to carve, to paint (see what we got up to last week) and to eat! Pumpkin pie is a seasonal favourite of ours, but this year we decided to try something a little different…

We've been feeling inspired to get creative in the kitchen! So we have made a sugary pumpkin treat that we know you’ll love just as much as us! Full of creamy, sweet goodness, these delicious drinks ensure the inside of your pumpkin doesn’t go to waste.

What you will need:

  • 710 ml whole milk
  • 240 ml double cream
  • 120 g pure pumpkin/pumpkin puree (don’t worry we’ll take you through to this step)
  • 120 g brown sugar
  • 2 tbsp sweetened condensed milk
  • 2 tsp pumpkin pie spice
  • 2 tsp vanilla
  • Whipped cream
  • Cinnamon

What you should do:

First step, let’s puree the pumpkin…

  1. Wash and cut the pumpkin into four sections.
  2. Peel and cut into smaller chunks.
  3. Pop in a large saucepan ensuring all pumpkin pieces are covered with water.
  4. Bring to the boil.
  5. Cook on medium temperature until pumpkin is tender. This usually takes 25 minutes.
  6. Drain and allow to cool.
  7. Puree in a blender or alternatively mash with a potato masher.

Now for the rest…

  1. Add all the other ingredients to the blender.
  2. Blend until the consistency is smooth.
  3. Pour into a big saucepan and pop on a medium heat.
  4. Stir the mixture until warm.
  5. Pour mixture into four lovely mugs.
  6. Top with whipped cream and a dash of cinnamon.
